Grits-FeatureGrits, cheese, bacon and fried shallots make for a warm, savory breakfast for a cold mountain morning.

Bacon and Cheese Grits

Serves 2

  • 2 packets instant grits
  • 1 tsp butter powder
  • 2 tsp onion flakes
  • 1 tsp garlic flakes
  • 2 Tbsp bacon crumbles
  • 2 Tbsp freeze dried cheddar cheese
  • 2 Tbsp fried shallots (or crispy onions)

Fresh ground pepper to taste.

Off the trail:
Combine all ingredients in a Ziploc bag, except shallots.  Put shallots in their own small bag, and add to larger bag.  Write on bag with a Sharpie, 1 cup H2O.  Seal bag and remove air.

On the trail:
Bring 1 cup of water to a boil.  Remove bag of shallots, and add remaining contents to boiling water.  Remove from heat, cover, and let sit for 8-10 minutes.  Divide between two mugs or bowls and top with shallots.
